Description
A no-bake, high-protein cookies and cream protein bar that’s creamy, crunchy, and easy to make at home. Great for snacks or post-workout fuel.
Ingredients
1 cup cookies and cream or vanilla protein powder
1/2 cup natural nut butter (almond or peanut)
1/2 cup crushed chocolate sandwich cookies
1/2 cup oat flour or almond flour
2–3 tablespoons honey or maple syrup
1 tablespoon milk (as needed to adjust texture)
Instructions
1. In a bowl, combine protein powder and flour.
2. Stir in crushed cookies.
3. Add nut butter and sweetener, mix until dough forms.
4. If mixture is too dry, add a splash of milk.
5. Press mixture into lined square pan.
6. Refrigerate 1 hour, then cut into bars.
Notes
Store in fridge for up to 7 days.
Use gluten-free sandwich cookies for a GF version.
Adjust sweetness to taste.
