Description

These gluten free dairy free chocolate chip cookies are soft, chewy, and loaded with melty chocolate chips. The perfect allergy-friendly treat that tastes just like the classic version—without the gluten or dairy.


Ingredients

Scale

1 1/4 cup gluten-free flour blend

1/2 cup coconut sugar

1/3 cup vegan butter, softened

1 tbsp ground flaxseed + 3 tbsp water (flax egg)

1/2 tsp baking soda

1/4 tsp salt

1 tsp vanilla extract

3/4 cup dairy-free chocolate chips


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. Mix flaxseed with water in a small bowl and set aside to thicken.

3. In a large bowl, cream together vegan butter and coconut sugar.

4. Add flax egg and vanilla extract; mix until smooth.

5. Stir in gluten-free flour, baking soda, and salt.

6. Fold in dairy-free chocolate chips.

7. Chill dough for 30 minutes.

8. Scoop dough onto baking sheet and slightly flatten.

9. Bake for 9–11 minutes or until edges are golden.

10. Cool on the pan for 5 minutes before transferring to a rack.

Notes

For a nut-free version, use a seed butter instead of almond-based butters.

Cookies will appear soft when pulled from the oven but firm as they cool.

Store in an airtight container for up to 5 days or freeze for 2 months.
