Description
These peanut butter banana cookies are soft, naturally sweetened, and super easy to make with pantry staples. A wholesome treat that’s perfect for any time of day.
Ingredients
1 ripe banana
1/2 cup creamy peanut butter
1/3 cup brown sugar (or maple syrup)
1 tsp vanilla extract
1 egg
1/2 tsp baking soda
1/4 tsp cinnamon (optional)
3/4 cup flour (or oat flour)
Pinch of salt
Optional: chocolate chips or chopped nuts
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
2. Mash banana in a large bowl.
3. Add peanut butter, sugar, vanilla, and egg. Mix until smooth.
4. Stir in baking soda, cinnamon, flour, and salt until a dough forms.
5. Fold in chocolate chips or nuts if using.
6. Scoop dough into tablespoon-sized balls onto the baking sheet.
7. Flatten gently with a fork.
8. Bake for 9–11 minutes or until edges are golden.
9. Cool on the pan for 5 minutes, then transfer to a rack.
Notes
Store in an airtight container at room temperature for up to 4 days.
You can freeze unbaked dough or baked cookies for up to 2 months.
